Waking up just steps from the beach, with the sound of waves and salty air filling the space, felt like a reset in all the right ways.
One of the major highlights of my stay was spending time at the Rooftop Bar, which sits high above Oceanside and offers the best sunset views in North County San Diego. It’s stylish without trying too hard — the perfect place to unwind with a cocktail, watch the sky shift from blue to gold, and take in panoramic views of the coastline.
The menu at the Rooftop was a standout — creative, coastal, and full of bold flavors. I ordered the Harissa Chicken Sando, and it did not disappoint. Perfectly crispy and spiced with just the right kick, it was served with golden patatas that had a light crisp and deep flavor — no basic fries here. The entire dish was elevated, satisfying, and ideal for a golden hour bite.
The service throughout the resort — from check-in to rooftop drinks — was warm and attentive, striking that perfect balance of professional and personable. Every space felt intentional, from the coastal-inspired decor to the flow between indoor and outdoor lounging areas.

After settling in, I made my way upstairs to The Cooper Lounge, a space that perfectly matches the hotel’s aesthetic — classic, moody, and elevated. I sipped a perfectly balanced martini and a rich old fashioned while watching the light shift through Union Station’s grand windows. It felt cinematic.
Downstairs at Terminal Bar, I leaned into some indulgent comfort food: crispy potatoes that hit all the right notes, and sopapillas — a nostalgic favorite for me. With extended family roots in New Mexico, sopapillas have always felt like home, and it was a treat to find them here, perfectly fried and golden.
The hotel’s location is ideal for exploring downtown Denver — walkable, central, and buzzing with energy. But to be honest, I didn’t need to wander far for great food. Each morning, I found myself at Snooze Eatery, which is conveniently right on the property. As an East Coaster, I’m not lucky enough to have a Snooze nearby… so yes, I went every day. And yes, I have no regrets.
